LEMON EXPLOSION CAKE
Ingredients:
1-1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 large eggs
1 cup granulated extrafine sugar
4oz (113g) salted butter
2 Tablespoons canola oil
1 teaspoon vanilla extract
1/8 teaspoon lemon oil
1/3 cup fresh lemon juice
1/4 cup fresh grated lemon zest
Preheat oven to 350C degrees.
Sift flour,baking soda and baking powder together, set apart.
Using your electric mixer, cream butter and oil.
Add one by one the eggs, then add sugar, vanilla, lemon juice and lemon oil.
Mix on medium speed until smooth and creamy.
Add dry ingredients by spoonfulls and mix well.
Pour mix in your favorite pan and bake between 45 to 60 minutes or until a toothpic comes out clean from the center of the cake.
Decorate with candied lemon peel and sugar rum syrup.
